What's For Dinner?

Today is Monday...my cleaning day. The only day all week that I can get all the bathrooms clean, mop all floors, dust and do laundry! I should be doing that right now...but instead I am trying to figure out what to make for dinner tonight.

Does anyone else have this problem? I like to cook...but once in a while I get in a rut. I start to feel like we eat the same thing all the time. My kids hate that! I did make a new chicken dinner last night...very good. Thanks Carrie for the recipe.

I checked my usual sites this a.m, cookinglight.com, myreciepe.com...and nothing is screaming YUMMY! So, I have no clue What's For Dinner! Somebody give me a new recipe!

Poppyseed chicken is always the biggest hit at our house - let me know if you want another chicken recipe :)

dont know if you want to hit traders or not?? but a good stand by is their stir fry garlic chicken it has veggies and is yummy...

shan's poppy seed cxn is great.. she takes it to all new moms....

Ok - first of all - after reading all of the other comments...I want the recipe for the poppyseed chicken too! I always feel like I am out of ideas regarding what to cook! The boys really like variety...if we have something too close together they get the most pitiful looks on their faces and say "we just had this".

One easy dish is Breaded Ranch Chicken. I use a 3 lb. bag of the chicken breasts from Wal-Mart, I trim any fat that may be on them and I cut each of them in half. Then mix together 1 1/2 c. crushed corn flakes, 1 1/2 c. parmeasan (spelling???) cheese and 2 packages of ranch dressing mix. Then melt 2 cubes of butter. Dip the chicken in the butter then coat with the corn flakes mixture. Place in greased 9x13 pan and bake uncovered for about 55 minutes @ 350 degrees. Sometimes I have extra butter and corn flakes mixture after coating all of the chicken and I just mix the butter with the corn flakes mixture and spread it on top of the chicken already in the pan.

AND - whenever you come to visit your in-laws...please make time to spend at least one day here at the farm...you can have lettuce, fruit, anything that's in season and I'll share my sister-in-law's cookbook with you...she is a chef and she made a wonderful cookbook for us!

Have you asked Penny? She always has great ideas. She gave me the best recipe for Brandied Chicken (which for the life of me I can't perfect [maybe because I don't cook enough]). She or I can give you that one and it is SOOO divine!

How do we make poppyseed chicken???

I'm making slow cooker bbq beef sandwiches.

Super easy-I bought a tritip, cut it into four pieces, put it in the crock pot with a bottle of bbq sauce and let it cook on low for eight hours. Then I slice it up and serve it on hamburger buns. So good!

I can vouch for Chrissie's tri-tip "sloppy joes" (as I mistakenly recalled them). Delicious! I'm way into stir fry right now.. found a great recipe on allrecipes.com. Super fast. I also make a quick dinner out of Trader Joe pizza dough by cutting 8 triangles out of it, making sandwiches in each (ham/cheese is our current fav), rolling them like a croissant, baking them, and dipping in marinara/pasta sauce. Served with a side salad, it works for nights when I thought of nothing.
